Speckle Acres is a five-generation family-owned farm located in Burlington Flats, just outside of Cooperstown, New York. It is named after the speckled trout.
At the height of Speckle Acres syrup production in the 1950’s, we tapped 2,500 maple trees and collected the sap using a horse-drawn sleigh!
Today, we annually hand tap 120 sugar maple trees and make 30 gallons of small batch maple syrup over a wood-fired arch.
The maple-making techniques used 70 years ago are still used today, however, we have introduced the process of reverse osmosis. This removes half of the water from the sap so less wood and time are required for boiling. Our small wood-fired evaporator is used to boil the remaining sap for 8-10 hours until syrup is made.
Our syrup is triple-filtered using gravity-fed techniques and is bottled in Ithaca, New York.
It is 100% pure, natural, and delicious.
